The other night I tried making stuffed bell peppers and they were a success! It made 6 stuffed bell peppers and a ton of leftover filling, too!
Ingredients
- 6 bell peppers
- 1 pound ground beef or meat substitute
- 1/2 white onion
- taco seasoning
- Rice-A-Roni Spanish rice (calls for 2 tbsp butter, 2 cups water, seasoning mix, and diced tomatoes)
- 1 can of black beans
- shredded cheese
- optional: sour cream, hot sauce
Steps
- Step 1: cook 1 pound of ground beef, drain grease, add 1/2 white onion, add taco seasoning
- Step 2: toast Rice-A-Roni Spanish rice with butter, add 2 cups of water, seasoning mix, and diced tomatoes then cook according to package
- Step 3: drain and rinse 1 can of black beans
- Step 4: combine ground beef, Spanish rice, and black beans
- Step 5: cut the tops off of the bell peppers and core the bell peppers
- Step 6: bring a large pot of water to a boil then boil the bell peppers for approx. 7 minutes
- Step 7: let peppers cool slightly then preheat oven to 350 degrees
- Step 8: stuff each pepper with the ground beef, Spanish rice, and black bean mixture
- Step 9: top each stuffed pepper with shredded cheese
- Step 10: bake the stuffed peppers for approx. 10 minutes
- Step 11: if desired, serve with sour cream and hot sauce on top
